Roasted Sweet potatoes-Cajun Style

Beware-Highly addictive! My brother introduced the plain roasted sweet potatoes few months ago. For that extra spice and kick i added Cajun spice and now I never have an excuse to not cook sweet potatoes again. Simple and a great side dish. Whenever i bake something in the oven.. first thing i do is: notice whether i have sweet potatoes at home.. if yes! chop, mix and into the oven, yeah that easy!! I don’t know anyone who hasn’t liked it.. yeah kids loved it too :)

 

Cajun spice is a seasoning mix used in many Cajun recipes. It is basically salt with a variety of spices. There are many commercial seasoning mixes on the market, i got mine from The Farmers Market in DeKalb, GA. Its a mix of cayenne pepper, black pepper, onion powder, garlic powder, chili powder, thyme,sweet basil and bay leaf. I am still hunting for the right proportion! Once i get, will post it :)

Ingredients:

2 large Sweet potatoes

2 tbsp olive or other vegetable oil

1/8 tsp sugar (for caramelizing)

Salt, to taste

1-2 Tbsp Cajun spice (i am using a store bought!)

Pepper, freshly crushed, to taste

Method:

Preheat oven to 450°F.

Cut off the ends and wash the sweet potatoes well. You can peel the skin of it, i prefer to bake with the skin as they turn out crisp and absorbs the spices well and it tastes great! Cut the potatoes in rounds, wedges or like sticks!

In a large bowl and add the oil (I always use olive oil for this recipe),salt and the Cajun spice. Sprinkle with sugar and crush some fresh pepper. Mix well to combine. Put the sweet potatoes and use your hands to mix well, so all pieces are coated with oil and spices.

Spread the sweet potatoes out in a single layer on a baking sheet; the oil they are coated with should keep them from sticking to the pan.

Preheating the baking sheet for 10 minutes, help the fries get crisp.

Bake for a total of 25 to 35 minutes, until they are well browned. The baking times are approximate; it depends on how thick you cut the wedges or rounds of sweet potatoes. Try to cut them evenly so they all cook at about the same.

Let cool for 5 minutes before serving.
