Cilantro Lime Rice, this rice preparation falls under the category of “the simplest things that are the best”. It’s perfectly cooked rice tossed with freshly chopped cilantro/coriander leaves, lime – lemon juice and seasoned with right amount of salt. Soaking time and cooking time: 20 + 20 mins
Ingredients you will need:
1 cup Long grain variety rice, I used Basmati
1 and 3/4 cups water
1/2 tsp oil
2 or 3 tbsp cilantro/coriander leaves
Lime and lemon juice – to taste
Salt to taste
Preparation:
Soak 1 cup rice in 1 & 3/4 cups of water for 20 minutes. Cook the soaked rice with 1/2 tsp oil. Soaking the rice before cooking and addition of 1/2 tsp of oil keeps the grains separate and avoids it getting mushy. I used a pressure cooker to cook the rice or you can cook in a heavy bottom pan too. For preparing the rice in pan: Bring the water to a full rolling boil, add soaked rice, cover and turn to low heat and simmer until rice is tender and the water is absorbed, about 15 minutes. Fluff rice with a fork.
Add salt, chopped cilantro/coriander leaves, lemon and lime juice – to taste.
Mix well and let the flavors blend in for 10 minutes before serving.
