Onam celebration is incomplete without Palada pradhaman or ada pradhaman.
Palada pradhaman is a creamy, cardamom flavored (not over powering taste though) payasam made with rice sheets broken into small bits, called ada and cooked along with milk and sugar. The ingredients are quite simple but the dish is soothing and satisfying after a fulfilling sadya.

Kalakand is a milk based sweet. Traditionally it is made by first making Chenna (the process is same as Paneer) and adding to milk that is reduced by boiling for a long time. This recipe takes half the time as well no cooking on stove, no cleaning those heavy bottom pan in which milk boiled and being very simple to make, the quantity is easily doubled or tripled and great for sharing during festive time.

Tres Leches, A Mexican dessert
Tres Leches, meaning three milks in Spanish. Basically a sponge cake is soaked in a mixture of three milks and topped with freshly whipped cream. The cake is extremely dense and moist due to soaking the cake in rich ingredients like whole milk, evaporated milk and condensed milk combined together.

Flan is a rich, traditional Spanish dessert. Two types of canned milk,eggs and vanilla are enough to make this creamy and smooth dessert. The sugar-syrup topping drenches it perfectly when carefully flipped to the serving plate. I served mine with a Belgium chocolate on top.
