Spinach-Artichoke Dip

Spinach-Artichoke dip, this rich creamy dip made with cream cheese is ideal for parties and is at its best when served with toasted pita bread.

This warm dip that is so comforting, it can be used in other recipes too, like stuffed mushrooms, also a great sandwich spread. The flavor is amazing and we love it with some roasted Mushrooms and bell peppers for sandwich!

 

Ingredients you will need:

1 (8 oz) Cream Cheese
2 cup fresh Baby Spinach/ 1/2 cup Frozen Spinach/ 1 pack Creamed Spinach
2/3 cup Sour Cream (avoid if using creamed spinach)
1/2 cup Marinated Artichoke hearts – chopped
1 Clove garlic – grated or 1/2 tsp garlic powder
1/4 cup Bread crumbs
1/2 cup shredded Mozzarella cheese
Parmesan cheese
Salt & Pepper – to taste

Preparation:

 

If using Fresh baby spinach: Blanch the spinach in 1 cup water. (Blanching is briefly cooking in hot water for a few minutes)

If using Frozen spinach: Thaw till spinach is soft.

If using Creamed spinach: Avoid sour cream

Melt cream cheese in a microwave safe bowl or stove top.

In a mixing bowl, add soft cream cheese, spinach, marinated artichoke, sour cream if using fresh/frozen spinach, grated garlic/garlic powder, salt and pepper. Mix well.

Transfer the mixture to an oven safe dish. Sprinkle an even layer of bread crumbs. Top with shredded mozzarella cheese and grate fresh Parmesan cheese.

Bake in preheated oven for 15-20 minutes or until bubbly and light brown.

Just out of the oven Spinach-Artichoke dip:

 

Serve with toasted pita bread.
