Sabudana Vada, a crunchy texture and a soft core. Makes a great evening snack with chai on rainy days. A great gluten-free appetizer.
Sago/Sabudana/Javarisi is a starch extracted from Tapioca roots.
Ingredients you will need:
1/2 cup sabudana/sago/javarisi
1 cup Boiled and mashed potatoes
1 tbsp cornflour (for extra crunchy texture)
2 or 3 green chillies, finely chopped.
1/2 tbsp lemon juice
1 & 1/2 tbsp cilantro/coriander leaves, chopped
1/4 tsp chilli powder
Salt – to taste
Oil for Deep-frying
Method
Wash Sabudana/Sago/Javarisi well and drain. Soak them in water till they are partially immersed and keep aside for about 1 hour
Mix the soaked and drained sabudana along with all the other ingredients to form a tight dough. Sprinkle little water if the dough is too hard.
Divide the mixture, Shape each part into a round and flatten slightly.
Deep-fry them in hot oil until they are golden brown in color.
Serve hot with Imli Chutney and Hari chutney (tamarind & green chutney)

A funny incident comes to mind. Me and my roommate love sabudana khichidi and soaked 6 people’s worth of sabudana overnight after taking stock of all the ingredients, and went to sleep dreaming of the awesome khichidi we were going to have the next day which was a sunday. The next morning we found out that our third roommate had used an entire bag of peanuts for making peanut chutney after we had gone to sleep!!!!!! So we were left with this huge bowl of soaked sabudana but no peanuts or any means of getting them. We decided to go ahead with making sabudana vada instead….I think we had about 25 BIG vadas each over the next 3 days. As ‘one’ of the unfortunate “pin velaivugal” , I dont think i can ever have sabudana vada again.

Hi Sneha, looks yum,!! .. Mom makes it nearly the same.. But adds peanuts to the dough. It tastes like heaven maybe u could try out that version as well sometime..! N yes.. A curd+roasted jeera+sugar+ green chilli+coriander mixed chutney to go with it.. Tastes amazing.
