Pineapple Upside Down Cake

Pineapple Upside down cake, the name says it all! Glistening slices of sweet and sticky caramelized pineapple on fluffy and moist white cake.

There are many versions which starts with a cake mix so you can make it blazing fast! If you are looking for one the same type.. No, this isn’t! Its made from scratch and I strongly believe in cake made from scratch are not that time-consuming and taste better.

That’s made from scratch, Buttery rich and caramelized pineapple cake with cherries.

Serves: 6 single serving

Ingredients you will need:

2 tbsp butter

1/3 cup packed brown sugar

6 Slices Pineapple rings – Fresh/Canned.

5 Maraschino cherries, drained and without stems

2/3 cup All-purpose flour/Maida

1/2 cup sugar

1/6 cup oil, (I used sunflower oil)

3/4 tsp Baking powder

1/4 tsp Salt

3/8 cup Milk (easier way to measure is 1/4 cup+1/8 cup of milk)

1 egg

Method:

Preheat oven to 350 degrees.

In a 7-inch square pan, add the butter and let it melt in oven. It takes less than a minute. Let the butter not start to brown. Sprinkle brown sugar evenly over melted butter.

Arrange pineapple rings over brown sugar. If using canned pineapple, drain the syrup thoroughly. Place cherry in center of each pineapple slice. I arranged them as shown in the picture below.

Placed a pineapple ring in the four corners and one in the center. I broke the sixth pineapple ring into 4 evenly sized pieces and placed them as shown in the picture.

In medium bowl, beat the remaining Ingredients with electric mixer starting on low-speed for 1 minute and on high-speed for 3 minutes, scraping the bowl occasionally. I used an electric mixer because the mixer incorporates more air into the batter for a lighter cake. You can mix the cake by hand but it won’t be quite the same texture as mixed with an electric mixer.

Pour batter over pineapple and cherries.

Bake 40 to 45 minutes. Every oven differs so have a check after 35 minutes and the cake id done when a toothpick inserted in center comes out clean.

Immediately place a heat-proof serving plate upside down over pan; turn plate and pan over. If you are not sure whether the cake is on the plate, tap the bottom of the pan gently.

Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan.

Serve warm. Microwave for 8-10 seconds when served later.
