Peas Pulao

Green Peas Pulao: Yet another rice recipe loved by all. It is very mild and fragrant, and great as a side dish for any North Indian curry or Dhal.

The days I am too lazy to do something elaborate or previous night sabzi is there, this dish comes handy!

A simple and aromatic rice dish.

Ingredients:

Ghee – 2 tbsp

Oil – 1 tbsp

Cumin – 1 tsp

Whole black pepper – 8-10

Cloves – 8

Cardamom – 4

Cinnamon stick – 1″ piece(2)

Bay leaves – 2

Green chillies – 3

Ginger garlic paste – 1 tbsp

Green peas – 1/2 cup

Basmati rice – 2 cups

Water – 3 & 1/2 cups

Salt to taste

Coriander & Mint leaves – finely chopped – 2 tbsp

Method:

In a medium frying pan, heat the ghee and oil together. Oil prevents the ghee from getting brunt.

Add cumin, whole peppercorn, cloves, cardamom. cinnamon stick and bay leaves one after the other.

Then add the chillies and ginger-garlic paste. You will frown if you had just cleaned the stove before starting the preparation cause as soon as ginger-garlic paste is added to hot oil, it splutters – So caution!

Add the green peas after few seconds to avoid the mess! If its fresh peas, continue to cook for 5 minutes. For frozen peas, avoid cooking as they will turn mushy when cooked along with rice in pressure/electric cooker.

Add rice and salt. Gently mix it salt and ghee-oil is coated well.

Transfer to electric/pressure cooker and add water.

For pressure cooker: Cook for two whistle.

After the rice is cooked, Do not open lid immediately. Cause the rice will become mushy while adding and mixing the coriander-mint leaves.

Add the coriander-Mint leaves and gently mix. Check for salt, add if needed.

Serve with your favorite side dish, Raita or Salad.
