Peach Cobbler

Ingredients:

1.5 cups of self rising flour

1 cup sugar

1.5 cups of milk

1/4 tsp ground Cinnamon

8 tbsp of butter (1 stick)

1 can (15oz) Peaches

If you are going to use fresh peaches:

Wash and Clean peaches. Slice them into wedges after removing the pit.

Combine the peaches(4 to 5), 1 cup sugar, and water (1 cup) in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

To make the Cobbler:

Preheat oven to 350 degrees F

Mix flour, sugar, cinnamon and slowly add the milk. Whisk well for sugar to dissolve and flour doesn’t form any lumps.

Put the butter in the baking dish and place in oven to melt.

Usually, I pour mixture over melted butter and not stir but this time, i poured the butter into the mixture, mixed well and transferred it to the baking dish. I liked it this way more!

Gently spoon the peaches on the mixture and gently pour the syrup on which the peaches cooked or soaked in can

Bake for 35-45 minutes.

Once the toothpick inserted came clean, i switched the oven to broiler mode and broiled it just for few minutes for that extra caramelized crust.

Serve warm peach cobbler with a scoop of vanilla ice cream.

For cinnamon lovers: Sprinkle additional cinnamon before keeping it in the oven.

What you don’t have self rising flour but have only all purpose flour (Maida):

For each cup of all-purpose flour, add 1 1/4 teaspoons of baking powder and 1/4 teaspoon of salt.
