Molten Lava Cupcake – Updated recipe

This is an updated recipe and post. I mentioned in my post dated 2 years back that My cake did not burst with chocolate lava when cut open like shown in the original recipe which I followed but the ones I baked had a gooey center. I didn’t bother much as the cakes were moist and tasty. But the updated recipe had that fancy part I wished for: chocolate flowing out like lava.

 

 

Molten lava cupcake, a rich and intense chocolate filled moist cakes with gooey center. These special cakes individually served are so good with powdered sugar, berries, whipped cream and chocolate ganache.

Updated Recipe:

Makes: 6 cupcakes

Ingredients you’ll need:

5oz bittersweet chocolate (use a good quality chocolate)
1 Stick unsalted butter
3/4 cup sugar
4 eggs
1/2 cup all-purpose flour
1 tsp vanilla extract

Preparation:

Place butter and chocolate in a heat proof bowl.

 

Using a double boiler method, melt chocolate and butter, stirring occasionally to make sure the chocolate and butter is well mixed and blended smoothly.

 

Double boiler method: A heat proof bowl placed on top of a saucepan of simmering water.  The two should fit tightly together; there shouldn’t be any gap between the bowl and the saucepan or else the steam will release, likewise do not use a bowl that sits precariously on a tiny saucepan. In the top bowl, you can melt chocolate without worrying that it will stick and burn.

An important step is to add water to the pan and bring it to a simmer, then place the bowl on top. Also the top bowl should not touch the water, but create a seal with the bottom pan to trap the steam produced by the simmering water.

The melted chocolate will look like this.

 

Preheat oven to 450 degrees. Grease the ramekins. It is important to generously butter each mold so the baked cakes release easily.

Using a hand-held electric mixer or whisk and beat the eggs, vanilla and sugar till thick, fluffy and smooth till the color changes to pale.

Stir in the melted chocolate and mix with a spatula. Add the flour and fold the mixture till it forms a smooth batter.

Pour the mixture evenly in the ramekins and bake for 12-15 minutes.

 

Once baked, let it sit for 5 minutes. These cakes will rise beautifully as they bake. Run a knife along the edge and invert it on the serving plate or serve the cakes in the ramekins.

 

Caution, the center of the cake is really hot. As I got them out of the oven, the chocolate began to ooze out.

 

Shake a little confectionery sugar on top and serve with a berry. Yum, soft cake with a gooey center.
