Fajitha Vegetables, tender and crisp Bell peppers, sweet red onion lightly caramelized and charred in oil with fresh oregano and salt. The best part about this side dish is that it only requires 5 ingredients and it takes only about 5 minutes to make it.
Most important of all is to cook the vegetables on high heat and cooking uncovered is the key to perfect Fajitha. When cooking them covered, the peppers release moisture and taste like steamed vegetable. The high heat helps in cooking, gives the light char at the sides and the texture of the peppers and onions keep their crispness.

Ingredients you will need:
1 Green bell pepper
1 Large red onion
1 tbsp rice bran oil/olive oil/sunflower oil
1/4 tsp dried oregano
Salt to taste
Note: Chipotle uses Rice-bran oil (mentioned in their website), but olive oil or sunflower oil works and tastes just as good. I prefer using dried oregano but you could use fresh oregano too.
Preparation:
Over medium-high heat, In a skillet, add the oil, peppers, onions, oregano, and salt and stir to combine, until the vegetables are evenly coated with oil, salt and oregano.
Cook until charred and slightly softened but still tender-crisp, about 4 minutes.
Remove from heat and serve the vegetables as a side dish, topping for tacos, on a salad or rice bowl like Chipotle does.
