Eggless Chocolate Cupcakes

 

A chocolate cupcake recipe that used neither eggs nor butter which turned out incredibly moist and had a chocolate burst in the mouth!

Simple recipe with very few ingredients, this one is a great one for first time bakers!

I did a few changes to the original recipe, the changes are: Reducing the sugar quantity to ¾ cup (actual recipe: 1 cup) and instead included 3 Tbsp mini chocolate chips, added 1/8 tsp cinnamon powder and 1 tsp vanilla extract to enhance the chocolate flavor. Also reduced the salt quantity to ½ tsp (actual recipe: 1 tsp).. Now isn’t there enough changes to say it is almost Own recipe now (hehee)

The ingredients you will need are:

1½ cups all purpose flour (Maida)

1 tsp baking soda

½ tsp salt

1/8 tsp cinnamon powder

1/3 cup cocoa powder

¾ cup sugar

3 Tbsp Mini chocolate chips

½ cup vegetable oil

1 cup water

1 tsp vanilla extract

1 teaspoon vinegar

Steps to make prefect cupcakes:

In a large mixing bowl, sift all the dry ingredients except the sugar and chocolate chips. (This step will ensure there are no lumps, so do not skip, it just takes few extra minutes)

Take a tablespoon of this dry mixture in a separate bowl and add the chocolate chips. Mix well. (This step will help in chocolate chips do not sink to the bottom of the cupcakes)

Add sugar and all wet ingredients. Mix thoroughly to have a lump-free, smooth batter.

Preheat the oven to 350 degrees

In a muffin/cupcake pan, place the liners and spoon the mixture. Fill till ¾ of the pan, giving it space to rise when baked.

Bake for 20-22 minutes or until a toothpick inserted comes out clean.

Once removed from oven, let them sit in the pan for 5 minutes and then move them to cooling rack to cool completely.

Can be served just like these (plain chocolate cupcakes) or be frosted. I am not a big fan of frosted cupcakes, so I prefer them plain but some chocolate sauce on top would be a great idea too!

Tip or a Twist:

Coffee (thin decoction or 1 cup of warm water mixed with 1 1/2 teaspoons of espresso powder or instant coffee granules) may be substituted for water!
