Chipotle Veggie Burrito Bowl

We decided to re-create the Chipotle Veggie Burrito Bowl experience at home and the experience was really good, as good as Chipotle. It is layers of cilantro-lime rice, black beans, fajitha vegetables, guacamole, corn salsa, mild tomato salsa, cheese and sour cream served in a bowl. This recipe is totally customizable recipe, add and subtract as you like and according to the ingredients that is in season. The recipe is also very easy to scale up for a crowd.

The whole dish screams summer because of the fresh corn, tomatoes and cilantro. There’s something about the ingredients together that’s just so comforting and I love the colors in the ingredients.

The puppy gal likes to give company while clicking pictures, for this particular session she was more enthusiastic cause of the sour cream, she is a big fan of yogurt, assumed sour cream was yogurt.

You’ll need: (the recipes are linked below)
Cilantro-Lime rice
Black beans
Fajitha Vegetables
corn salsa
mild tomato salsa
Shredded cheese (mix of pepper-jack and mild cheddar)
sour cream*
Romaine lettuce

*You can substitute sour cream with plain Greek yogurt.

The quickest way to assemble the dish is to cook rice and beans first. Soaking the beans ahead of time or previous night helps in cooking the beans fast. For the Cilantro-Lime rice, leftover rice too works well.

For the guacamole, corn and mild salsa: sweet red onions, jalapeño and cilantro with lime and lemon forms the base. In a medium mixing bowl, make this mixture and use it for all three. The corn salsa has an extra ingredient “Poblano pepper”.

Chop bell pepper and onions for fajitha. Grate cheese but not too finely. Wash and chop fresh romaine lettuce just before you serve.

Chopping and mixing of sweet red onions, jalapeño, cilantro and juice of lime-lemon juice makes the process easier and time is reduced by half.

  1. Thanks Sneha for the recipe. Tried it out, and it came out very well. We followed your recipe ditto except used home made curd instead of sour cream/greek yogurt.
