Blackforest cake

Black Forest is made with several layers of chocolate cake, with whipped cream and cherries between each layer. The cake is then decorated with more whipped cream, maraschino cherries and chocolate shavings.

Traditionally, Kirschwasser, a clear liquor distilled from tart cherries is added to the cake, other liquors like rum are also used. This is preparation is without alcohol, instead the syrup of maraschino cherries is used.

I had waited to make this cake for months, knowing its my hubby’s favorite I had reserved it till his birthday.

The ingredients you will need:

1 & 1/2 cups white sugar
1 & 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
1 cup milk
1/4 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

For assembling:
10 oz maraschino cherries (do not discard the syrup)
Whipped Cream (store-bought/homemade)

For Homemade Cream, Whip 3 cups of heavy  cream with 1/3 cup of sugar till it forms stiff peaks, but be careful not to over work with the cream.

Drain cherries, reserving the juice, that is going to replace the liquor used in authentic recipe.

Preparation:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans. Lay parchment paper at the bottom of the pan, this will help in removing the cakes easily out of pan.
  • In a large bowl, Combine: all the ingredients expect hot water.
  • Beat until well blended, approx 4 minutes. Pour hot water and mix well till all the ingredients to a creamy texture, do not over work with the batter.
  • Pour batter into prepared pans. Bake for 30 minutes, or until wooden toothpick inserted in centers comes out clean.

 

Tip: I mention in every cake recipe of mine, Cakes from scratch have to be timed carefully in the oven because every oven is different. Start checking it with a toothpick 10 minutes before the given time and after that every 3 to 5 minutes until the toothpick comes out mostly clean.

Once taken out of the oven, let it cool for 15-20 minutes on kitchen counter. Transfer it to a wire rack to cool completely before removing cakes from pan.

With long serrated knife, split each cake layer horizontally in half.

Assembling the cake:

Place one cake layer on a cake plate.

Sprinkle the syrup on the cake (this step will make sure the cake is moist and the cherry flavor is absorbed fully)

Spread whipped cream over the top. Dry about 1/2 cup cherries on a paper towel and slightly crush them and spread evenly over the top of the cream.

Place the second layer of the cake on top of the cherries. Repeat the above step

Cover the sides and the top of the cake with the whipped cream.

Decorate the top of the cake with the remaining cherries and use any design you prefer.

To make chocolate shavings for the top of the cake, shave a chocolate bar using a vegetable peeler. Refrigerate curls until you are ready to serve the cake.

    Sneha: You did mention “whipped cream mixture” in the recipe to cover the cake and to be placed between the layers. Is it just the whipped cream itself or whipped cream mixed with some other ingredient ?
