Black beans

Black beans cooked with onions, garlic and spices. These beans are versatile, toss them into salad, taco, burrito or soup  for a quick meal. I have posted other recipes of Restaurant Chipotle, this beans recipe is not how it is made in the restaurant, I tweaked the recipe with the ingredients part but it is certainly similar and tasty.

I like to soak and cook the beans. It’s healthier, tastier and cheaper. I used to use canned beans and still use sometimes when I need to use for a very large quantity  or when I have to make anything instantly but try to avoid it as much as I can.

The same recipe can be made in the slow cooker, doesn’t need soaking the beans and convenient for busy days or parties. Instead of adding different spices like Chile, Cumin, Garlic, Oregano and pepper, I decided to use a tablespoon of taco seasoning.

Serves: 3-4 people
Soaking and prep time: Over night or couple of hours and 10 mins
Cooking time: 15-20 mins

Ingredients you will need:

1 cup dried black beans
3 cups of water
1 tbsp olive oil
1 bay leave – dried or fresh
1 medium size red/yellow Onions
2 pods of garlic
1 tbsp taco seasoning
Pepper to taste
Salt to taste

Preparation:

Soak rinsed black beans overnight or in a casserole dish with hot water for couple of hours. Cook in cooker with 3 cups of water and 1/4 tsp salt for 4 or 5 whistles until the beans are tender OR cover them with fresh water, and bring to a boil. Cover with a lid, and let the beans simmer till done – about 1 to 1 ½ hours.

Heat olive oil in large skillet over medium-high heat. Add bay leaf and chopped onions, sauté until onions begin to turn soft and translucent, don’t let the onions brown. Add chopped garlic and cook for 30 seconds or till the garlic is fragrant. Add taco seasoning; stir for 30 seconds and add cooked beans with the stock.

Cover and cook for 12-15 minutes until the beans are well blended with onion-garlic mixture. Season with salt and fresh ground pepper to taste.

Serve over cilantro lime rice or in a taco or burritos.
