Black beans-Corn salad

Black bean-Corn Salad: I am totally in love with this salad! Its colorful, flavorful and so refreshing. This healthy salad is ready in few minutes so its just-that-apt dish with tortilla scoops to feed a big group of hungry people. (Dang! I forgot to take a pic of this delicious salad in those tiny tortilla scoops, they are so appealing that its hard to resist after a few. I am sure I am going to make this pretty often, will upload the pic soon!)

Fresh corn, tender beans, crisp pepper mixed with cilantro, lime and a hint of taco seasoning makes this a great side for a meal or a filling mid day snack. Add chopped avocado for rich and creamy texture!

 

Guacamole, Chilled Salsa (recipe to be posted soon) and this salad served with Tortilla chips is a sure hit for parties! Don’t they sound refreshing and perfect summer time dishes.

Ingredients I tossed in:

15 oz can black beans, rinsed and drained
1 cup corn kernels
1/4 cup Onion
8 – 10 cherry tomatoes or 1/2 cup any tomato seeded and chopped
1/2 cup Sweet pepper/Bell pepper – Seeded and chopped. I used Yellow, orange and Red for more color
2 tbsp chopped Cilantro/Coriander leaves – A must!
1 tbsp Lemon Juice or to taste
1 tsp Taco Seasoning
Salt & Pepper
Pickled/Fresh Jalapeno – Optional
Chopped Avocado is great too!

Preparation:

Combine black beans, corn kernels, onion, tomato, peppers and cilantro/coriander leaves in a mixing bowl.

Add Lemon/lime juice, taco seasoning, salt & pepper and Jalapeño for heat.

If using olive oil, whisk olive oil with Lemon/lime juice, taco seasoning, salt & pepper and add to ingredients in mixing bowl.

Toss everything well and serve immediately or chilled.
