Hummus is an Arabic dip/spread made from cooked, mashed chickpeas/garbanzo beans, blended with tahini (sesame seeds paste), Olive oil, lemon juice, salt, garlic parsley. It is a wonderful snack or appetizer, and is great with warm pita bread or veggies.
An easy home-made Hummus, scooped with pita, celery/carrot sticks. Also a delicious accompaniment to falafel, grilled eggplant/Zucchini and Kalamata Olives.
You will need:
Mini Processor to Grind and below ingredients
1 19 oz Can/ 500gms of Chickpeas/Garbanzo beans
3 tbsp tahini paste
Few strings of parsley
2 medium size garlic cloves
1 tbsp lemon juice
3 tablespoon of good quality olive oil, divide into 2 and 1 tbsp
Salt -to taste
Water (for smooth consistency)
For garnishing: Olives, Paprika powder, Chopped parsley
In case of using dried chickpeas, wash and soak chickpeas over night and pressure cook for 3 whistles. Drain all water and use.
ForĀ coarse texture Hummus, Pulse all the ingredients with 2 tbsp olive oil in food processor. For a smooth Hummus, add few tablespoon of water and grind.
Transfer to a shallow bowl/dish, make a kind of well in between and drizzle 1 tbsp olive oil. Sprinkle paprika powder. I love to arrange Hummus with Kalamata Olives.

I will try this over the weekend… It’s a very healthy dip too given its high in protein… Great for vegetarians…
